This is pretty easy to do in HyperCard - creating a set of records using a nice screen form in a HyperCard stack, and then exporting a "formatted" set of mail merge records to a plain text file using a simple script. (the data file for the merge can be plain text, it does not actually have to be a formatted Word file). A handy tool to make this easier is the FieldToFile XCMD from the Dartmouth XCMD collection.
