You bet. Check out LaserTalk from Emerald City Software. It uses the printer's PostScript interpreter to image things, and then ships a bitmap back to your Macintosh to turn into stuff on the screen. This is in fact a side effect; what it's really intended for is creating PostScript effects for text that can then be pasted into Word/MacWrite/etc. documents.
