According to "Green Leaves of Barley" by Dr Mary Ruth Swope (which may not be completely reliable...) the PH of saliva varies in reaction according to your diet and general health - and may be acid or base. It does seem likely that diet and medical conditions could affect it since normal saliva is fairly close to neutral.
