You definitely need to look into either Boomerang (now at version 2.0, shareware) or ShortCut (Ray Lau's utility, available from Aladdin Systems in NYC). These utilties do essentially the same thing--they help you manage your work and files while you're in the SFGet and SFPut dialogs. ShortCut will even unstuff files on the fly for you. I don't know much about Boomerang--perhaps someone who has used both can comment on the differences/strengths/weaknesses here? At any rate, I've got my measly Jasmine 40 partitioned 3 ways (sorta like yours--System/Utilities, Applications, and Data Files [also used for any sort of scratch work])y, and just wouldn't know what to do if my ShortCut were taken away. With ShortCut, you can access any disk from a pull-down menu in the dialog, or by command-keys.
