Drain oil to moisten surface of pita bread. Slice cheese and spread over surface of pita. Add tuna, anchovies, pepper, garlic. Top with a slice of tomato. Place in pre-heated oven at 350 F, and bake until pita is crisp on edges. Serve. (why do many recipes say "Serve." at the end?
