I've seen a lot of good stacks out there, both commercal and PD/Shareware. For example, there are some good MIDI stacks that are quite powerful, Macrecorder ships sample manipulating stacks, there are some great games available as stacks, and devlopers know that every Mac owner will have Hypercard so it encourages software development.
