This means 1 Meg for the IIgs, and 128K for 8-bit Apple II emulation. The games aren't running (most likely) because of the ROM 03 GS, and have nothing to do with memory (I think). These games were written without the use of the ToolBox, and are incompatable with the ROM 03 GS and later. There are patched versions out there, however. Finally, put back all your fonts, DAs, etc. Simply DELETE the Finder (named START), and then put on your system file (named xxxxx.system).
