Retrospect does what you want, I believe. I seem to recall from the 89 MacWorld Expo in Boston that the salesman talked about an option to create a backup file on any device other than the one being backed up. This backup file is the same thing that is written onto mag tape (that is Retrospect's true purpose, a mag tape archiver/backup), but could be written to a place other than the tape. You could then use FTP or GatorBox or anything else to move that file to your final destination (heck, if you have a GatorBox, mount your Ethernet destination and have Retrospect write directly to it).
