How can I make elm copy a folder other than my default outgoing folder or a
folder based on the person being sent the mail?

For example, I want to send all outgoing mail on a certain project to a
folder of that project's name, not to the recipient's folder.  Can this be
done, or do I have to cc myself and save the copy to the correct folder?
