I am also compiling a list of useful commercial software for the major PC's. We use construction sets to customise games, and can provide alternative access to many standard programs with the Adaptive Firmware Card on our IIgs, Keyboard Expander and EzScan on our PC. I am sure there are many suitable programs we do not already know about. If you are using adapted recreational software, and/or using standard recreational software with adapted access, I would welcome comments about your favourite program/s, or any tips you can offer for accessing a particular program.
