The Scene application in NextDeveloper/Demos does it.
You can capture the entire screen and save as bitmap
(or eps) or particular windows.

There appears to be several multimedia applications for
the NeXT.  Does any of them read Hypercard stacks from
the Mac?  There is a lot of hypermedia work invested in
those stacks.
