Have you tried using a more recent version of ProDOS 8? The GS/OS System Disk should have version 1.8 or so. Copy the P8 file from /System.Disk/System/P8 to a disk, rename it to PRODOS, then copy it to the disk you wish to boot from. That possibly might help.
