Interesting....

Have you tried using a more recent version of ProDOS 8?  The GS/OS
System Disk should have version 1.8 or so.  Copy the P8 file from
/System.Disk/System/P8 to a disk, rename it to PRODOS, then copy it to
the disk you wish to boot from.  That possibly might help.  Also, of
course, read the manual that came with the hard drive.  They might have
suggestions.
