I use Redux from Microseeds to back up to SyQuest cartridges.  It is clever
enough to determine that the backup medium can support a finder-like copy
of your files and then gives you the option to do so.  If you do this, then
you really do use the finder to do a restore.  Redux allows you a fair
degree of control over what you want backed up.  It is very easy to set it
up to do incremental backups (copies).  I find it much more pleasant than
copying the entire hard disk or set of folders with the finder.
