  Select the file and do menu "Get info" (very much like finder), you will
get a window where you could change the Type and Creator.

  If the reason for this is to open a Stuffit archive, there is a much
easier way: Hold down option-key while selecting the menu item "Open archive"
in Stuffit. This will give you the possibility to open any file.
