Let cool 'til your pinky can stand the heat for a count of 11, or to a temp of 130F. Mix a little of the milk w/ 3 - 4 Tbsp of yogurt. Stir in quickly. Let stand covered w/ a plate and a towel in an earthenware bowl overnight or for 8 hours. Strain through cheese-cloth for a thicker result (often called yogurt cheese) eric
