Just about any monitor cable you buy will separate the video port
signals into Luminance, Chrominance, and Audio.  Just run the Audio line
out to your amplifier, and you're all set.

This has been done.  In fact, there is a "second stereo SID" cartridge
available from Dr. Evil Labs.  Unfortunately their address has escaped
me.
