I think that this is a bit of a cheat.  I figure there has to be a
better way, but this works.. try this:

on doMenu what
    if what is "Open Stack..." then
        go to stack "the stack you want" in new window
    end if
end doMenu

This will pop up a dialog box with the question:
    "Where is the stack you want?"
as long as you don't actually have a stack called "the stack you want"!
