Thanks! Made this last night and it was surprisingly good. Fairly cheap and simple, too. COLCANNON 1 lb potatoes (about 4 medium) 1 lb cabbage, shredded or chopped fine 1 lg onion, minced 1/4 c milk 2 Tablespoons butter 4 oz cheddar, shredded salt and pepper Boil potatoes in skins till soft. Set aside till cool. Boil cabbage and onion in potato water (may have to add more water) for 5 minutes and drain. Remove and discard skins of potatoes. Mash potatoes with the butter and milk. Mix the cabbage and onion, and 2/3 of the cheese with the mashed potatoes. Season with s&p. Spread in a buttered casserole and top with remaining cheese. Bake in 350 F oven for 25 minutes. Enjoy. Good with a tomato salad.
