The easiest way to toggle Finder/Multi-Finder is to set the Mac to boot up in
Multi-Finder and if you find it neccessary to boot into Finder hold down the
command key during the boot.

Note: it's only neccessary to hold the command key down after all of your INITs
load, but it's best to hold it down the whole time or you may miss and have to
reboot.
