Thank you so much.". Don't rewrite the headers. If you can't transport the way you want you are entirely within your rights and privileges to bounce the message. Re-write could be considered rude. Besides, it looks like the percentage of sites that can successfully rewrite is vanishingly small. Note that this is then a negative feedback system. The bouncee will either get the hint, will find another transport path, will stop sending mail, will install a better mailer, or will just enter an honest profession.
