I estimate that a "stock" IIGS with 1.125MB of memory is fully as capable as a typical IBM PC clone; thus if a top-notch IIGS programmer worked on it, Sierra SCI (thus the majority of their recent games) and Ultima V/VI should be able to work nicely on a IIGS. I don't think the //e is feasible, though, not so much because of slow speed (although that does hurt) as because of constrained RAM access -- memory management would be just too painful.
