These are absolutely the best oatmeal cookies I have ever made. Everyone loves them! -Kathy === BEST OATMEAL COOKIES 1-1/4 cups margarine 1 teaspoon baking soda 3/4 cup firmly packed brown sugar 1 teaspoon salt 1/2 cup granulated sugar 2 teaspoons cinnamon 1 egg 1/2 teaspoon nutmeg 1 teaspoon vanilla 3 cups uncooked oats (quick or 1-1/2 cups all purpose flour old-fashioned) 1 cup raisins (variations include 1 cup cranberries or 1 cup choc chips) Heat oven to 375F. Beat together margarine and sugars until light and fluffy. Beat in egg and vanilla. Combine flour, baking soda, salt and spices; add to margarine mixture, mixing well. Stir in oats. Stir in raisins. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 8 to 9 minutes for a chewy cookie, 10 to 11 minutes for a crisp cookie. Cool 1 minute on cookie sheet; remove to wire cooling rack.
