Here's a summary of the responses I've received:

The Adobe Postscript cartridge for the HP LaserJet Series II works like
a charm, especially if the printer has a total of 2.5 Mb of RAM.
Note, however, that using this cartridge with the HP LJ II will NOT
allow you to interface with a Mac (much to my disappointment).
There currently is no really easy or high-quality method of using
a Series II with a Mac, unfortunately.

As for Ventura for the Mac, it works great.  One of its strong points is
that it accepts files from the PC version flawlessly, including the
graphics.
