In the wild birds learn from observing other birds, so it sometimes hard to get a bird to eat new things if there aren't others around setting an example. I agree that I wouldn't try to "force" the bird, but I would keep trying. Sometimes birds will "bathe" in wet greens, then learn to have fun tearing vegetables apart, and then finally to eat a little bit in the process. Still, maybe some birds will never catch on...
