i know that tutor-tech hypermedia from techware corporation is a 'hypercard'
like program that runs on the apple //. it's availble from APDA (apple
programmers and developers association) for $195.00. i've seen it advertised
elsewhere for about the same, around $199.00.

"tutor-tech is designed for hypermedia developers and enthusiasts using apple
// computer family for project development. in the tradition of hypercard, a
tutor-tech stack is a collection of pages composed of text, drawings and
imported artwork. pages can be linked to other pages by adding buttons, etc."

they also sell a tutor-tech gradebook for $95.00.
