There is a good book called Interfacing to the IBM Personal Computer, or something similar, by Eggbrecht.  It comes highly recommended.

Eggbrecht was the fellow who went to a company in NJ that was planning
on cloning the Apple II.  He was on the IBM PC design team.

Sounds like a winner to me.
