The SID Test Software breaks up sounds-to-disk into about 2-second chunks on my SE (65 msec SCSI drive), and Mike Ciholas tells me he doesn't think that software is really the best to use anyway. Even when I manage to record a decent snippet of sound, I don't seem to have any S/W that can convert it to something HyperCard can use. Sound Edit happily loads the sound files, but can't play them.
