Ingredients: 4 boneless, skinless chicken breasts (I debone my own; it's much cheaper) 1 egg Italian bread crumbs 2 T. olive oil tomato sauce (spaghetti sauce works best) part skim mozzarella cheese, grated Directions: Take chicken breasts and wash under cool water, pat dry. Dip chicken in bread crumbs, then in beaten egg mixed with a little water, then dip in bread crumbs again to make a coating. Fry in a large frying pan in olive oil until browned on both sides. Place chicken in baking pan, and cover with tomato sauce. Sprinkle with cheese until covered. Bake in a 350 degree oven for 30 minutes. Enjoy! I add garlic powder and parmesan cheese to the breadcrumbs before coating the chicken. You also can use regular mozzarella cheese if you aren't worried about fat and cholesterol.
