That's because every time you start mainframe Kermits they come up in
text mode.  You can fix that on Unix systems by creating a file
".kermrc" in your home directory.  Put this on the first line:

set file type binary

You can also specify the type of parity, block length, and checksum
type you wish to be your defaults.  See the documentation for your
particular mainframe Kermit for details on the syntax of these
commands.
