There are several undelete programs for the Rainbow. But I usually use Norton's NU v 4.0 - if you use it with the /D1 or /D2 switch, it will go to the IBM-PC BIOS or to ANSI.SYS, respectively. If you have Code Blue or something similar, this should be all that's needed; if you use /D2 even that shouldn't be necessary. For some reason Norton v4.5 seems to have troubles on the Rainbow - I've never tried to track down why since 4.0 works just fine.
