You can easily add a second MFM drive to the second channel, drive 1. Some considerations: Power Supply - is yours have enough wattage to support a second large hard drive (if it is 200W or better, your OK.), does your current hard drive cable have connectors for two drives? - if not you'll need to get one along with the smaller data cable, and lastly, can your case support another drive device?
