You choose which operating system you want. If you want AmigaDOS only, get a non-Unix Amiga. If you want Unix, get a unix Amiga. Although Unix and AmigaDOS don't run concurrently, you can reboot into either and so use whatever you like. And your point about X isn't such a big deal either as X is a standard.
