I quickly figured out (well...mostly remembered from the warning) that if you use the shift key as one of your controls, Easy Access will turn on and lock keys down. If you hit the key 5 times consecutively, Easy Access activates. Then any key you hit 2 times in a row will "lock". Personally I hate Easy Access, and haven't used it since I figured out what it was.
