The application area we're interested in is making low cost personal computers with ethernet cards act as network interfaces for printers such as the new HP Laserjet IIIsi, which only have parallel (and serial) interfaces. Given we have old pc's with enet cards coming out of our ears, these would be ideal to use as network controllers for these printers. Eventually HP will offer the internal ethernet option for these printers with LPR/TCP/IP support built-in, but for now using a basic and cheap pc looks like the best option.
