CARROT KUGEL 2 cups flour (white, whole-wheat or a combination) 2 tsp baking powder 1/4 tsp salt 1/2 cup brown sugar 4 oz. margarine (or butter) 2 eggs 1 tsp baking soda 1/3 cup hot water 4 cups (packed) grated raw carrots Mix the flour, baking powder and salt. Cream the margarine and sugar, beat in the eggs. Dissolve the soda in the hot water. Add flour mixture to creamed mixture alternately with the hot water. Fold in carrots. Spoon into a greased baking pan (about 8x12 inches). Bake at 350 F. about 40 minutes or till it tests done with a toothpick. Serve hot or at room temperature. Serves 12 Annice
