My mother always made a very EASY one.

1 baked pie shell (I think it was 9")
instant vanilla pudding 
1 tub cool whip
sliced bananas

Layer bananas about 3-4 slices deep in the pie shell. Prepare vanilla
pudding according to directions. Pour pudding over bananas in pie
shell.  Chill. Serve with cool whip.

It's a lot better than it sounds :-).
