OLYMPIC COOKIES (aka Monster Cookies) 1 C butter or margarine 1-1/2 C brown sugar, firmly packed 1 egg 1-1/4 t vanilla 2-1/2 C oats, uncooked 1 C flour 1 t baking soda 1/2 t salt 1 C M&Ms plain chocolate candies 1/2 C raisins 3/4 C chopped nuts 1/4 C coconut (optional) Beat together butter and sugar until light and fluffy; blend in egg and vanilla. Add combined oats, flour, soda, and salt; mix well. Stir in remaining ingredients. Drop dough by rounded teaspoonfuls onto ungreased cookie sheets about 3 inches apart. Press 2 to 3 additional candies into each cookie, if desired. Bake at 350F for 8 to 10 minutes, or until golden brown. Cool on cookie sheets about 3 minutes; remove cookies to wire rack to cool thoroughly. Makes about 4 dozen 2-1/2 inch cookies. (97 calories each) Pete Brokaw, brokaw@umaxc.weeg.uiowa.edu
