We've been using something called "System Picker 1.0",
which was written by somebody at Apple.  Run it,
select a startup disk, and click "restart". Blammo.
I still switch to 6.0.7 to play SimCity; that's about it.

My roommate found this;  I'll have to check on
its availability.
