Ingredients: 4 oz.margarine or butter 1+1/4 cup brown or white sugar 2 eggs 2 cups flour 1+1/2 tsp. baking powder 1/2 tsp. baking soda 1 cup or 3 bananas - mashed 2 to 3 tablespoons sour cream 1 cup pecan or walnuts a few more nuts to decorate Method: 1. Heat oven: 300 deg. 2. Grease either a large loaf tin or an 8" by 11" baking tin. 3. Beat margarine and sugar till fluffy white. 4. Beat in the eggs. 5. Mix flour, B.P and B.S. together. Add to the above mixture. 6. Add bananas and sour cream. Blend in gently. 7. Fold in the nuts. 8. Pour into the baking tin and bake for 60/70 mins. 9. Let the loaf cool well before slicing. Don't forget to decorate with some nuts. Notes: I have tried mixing different nuts or use one kind alone. My favorites are the above and cashew nuts, used on their own or mixed. Enjoy!
