You might like to try it. l/2 cup shortening 1 cup sugar 2 eggs 1 cup ripe mashed bananas 1 tsp of lemon juice 2 cups all purpose flour 3 tsp. baking powder 1/2 tsp salt 1 cup chopped nuts (we use walnuts) 9"x5" loaf pan; (1) oven; (1) oven thermometer Cream shortening & sugar very well. Add eggs one at a time, beating until light & fluffy. Mash bananas & press through sieve then add lemon juice (to keeps bananas from turning black). Beat into the creamed mixture. Add nuts. Grease a 9x 5 pan. Bake at 350 degrees for about l.25 hours. Makes (1) loaf. Hope you enjoy it. (you can add some powdered sugar to the top - that's nice).
