Is a faster Mac out of the question because of price? Also, in many people's opinion, the Atari ST has better music software than either of them, and three of the main products, Cubase, Notator, and Dr. T's, come with task switching software that will give you pretty much everything you would have wanted with MIDI manager or the Amiga's native multitasking - this is particularly true of Notator's system, which can run sequences in the background while you run other applications.
