Page Layout programs like PageMaker, Quark Express, DesignStudio, etc. typically display a PICT included in the resource fork of the EPS file on creation. These programs do not interpret the postscript in the EPS. All they do with that is send it out when you print. You need a postscript interpreter for the Mac. Freedom of the Press Light is the cheapest way to go (I think), though I've heard complaints about its accuracy. (And you can't zoom in to examine registration of objects.)
