cookbook techniques
        A cookbook which does have much on techniques along with
recipies is "The Joy of Cooking" by Rombauer and Becker. I'm not
sure how viable a 'cookbook' would be if it were devoted exclusively
to techniques,since techniques depend rather heavily on the ingredients
one is working with.
