You only count as kosher if you were killed properly, specifically by being bled to death by a sliced (using a flint knife, if you want to be really particular) throat, generally across the jugular. (ooh, gross, what a just grody idea, gag me with a fork, ohmcgaaawhd) Also, I believe there are other requirements too, regarding the way you have to be cooked. At some point, a ritual purification using properly blessed rocksalt is required for some things. I am not sure, not being orthodox (nor Jewish) about when this is required. However, I don't think there is any explicit mention anywhere in the Books of the Law that makes human flesh trafe (anti-kosher). Would tend to disrupt things for those of us who are Christians to have the ritual of Communion be unclean, I guess.
