When I was in an apt., I put a piece of ginger root (from the grocery
store) in a pot of potting soil.  It grew a plant about 10 " tall.
After a while I dug it up...the ginger root was all shriveled up, and
there were't any new roots.  I think I didn't wait long enough.   
Usually with things like garlic, one waits til the tops die down.
