Does anyone have any information about projectors that will take a
signal off a terminal and project the changing image on a wall screen?
I know of one, the Electrohome EDP-57.

Also, what if the terminal is a VT-100 which already has a "Video out"
plug (which according to the manual provides RS170-like output)? Does
this make projection onto a large screen easier?
