It should be served cool, not cold (else it loses some of its flavor). Ingredients: 1 medium-sized onion 1 tablespoon butter 1 teaspoon sugar 3/4 teaspoon ground cumin 1/8 teaspoon red pepper (the type you put on pizza) 1 quart chicken broth 1 pound (!) scallions 1/4 cup sour cream Chop the onion and brown it slightly in the butter. Add the cumin and simmer a few minutes. Transfer to a 2-quart or larger pot. Add the chicken broth and red pepper and bring to a simmer. Now clean and chop the scallions. Add to the simmering broth and continue to simmer for 15 minutes. Puree the broth in a blender or food processor. Let cool. Stir in sour cream. Chill and serve.
