I've been using the type of press you describe for a few years. It
avoids the waste of garlic characteristic of earlier presses, but not
the scorn of purists dogmatic in their resistance to pressing garlic.

I think it's fine, and can't detect any difference between garlic
diced with a knife and put through the press.
