I took a similar cruise in '76 (not including Israel tensions with the arab world !!) and found the greek islands to be hauntingly beautiful and romantic Excitement and pure other worldliness of the bazaars in Egypt is not easily forgotten.I do regret not being able to spend any time in Israel and also missing out on Istanbul whilst I was in the area(maybe next time). Information for the cruises can be found through American Express travel brochures(expensive and then some more) or from the greek office of tourism, new york city. I would check on the costs of this type of venture as well as a two week stay in Israel as I understand costs are still escalating.
