I just tried making some soft pretzels from a newspaper recipe, egad! I ended up with very curly breadsticks! Not only that, they didn't even get browned like I fully expected they would. I've never seen soft pretzels or bagels with a hard crust! What is the secret that I'm missing? How do you make those little devils so that they have a soft 'skin' instead of a hard crust?
